I'm on my way. My smoker is assembled and I am seasoning this as I type.

I have a remote thermostat but no oven thermometer.

I know that I shouldn't put the remote in and on the grid so should i just stick it in a pear (no potatoes) and then monitor the temp. I want to make sure it will hold at 225.

Looks good - I just drilled a hole in a dowel I had in the garage and that is what I use all the time now
 
Scarbelly, I really like that idea. I may even mount the dowel to the inside; kind of like a permanent probe holder. Thanks.
