sfprankster's (mis)adventures with Gruyere Stuffed Burgers

  1. This is grilling burgers, Santa Cruz Mountain style... [​IMG]

    As my trusty and dusty Weber kettle gets less use nowadays, with the WSM sitting at the ready nearby. I decided to make a favorite around here, cheese stuffed burgers.

    All begins with 1-1 1/4 lb of ground chuck, made into 4 patties. Grate your favorite cheese onto 2 of the patties, tonights being cave aged gruyere for me and swiss emmentaler for my gf. Lay the remaining 2 patties onto the first and crimp the edges together. Salt and pepper the patties to taste.

    I used 3/4 chimney of lump mesquite, in my modified kettle, to to do a very fast sear, over high heat(450-500). This cooks the burgers in roughly 7 minutes total. 

     

    Notice the flames licking the burger soon after placing them on the cooking grate. You will need to control the flames with the lid, closing as necessary to snuff the flames. 

      

    Flipping after 4 minutes reveals a nice sear on the first side... [​IMG]


    A little cheesy goodness oozing from the burgers after a total of 7 minutes on the kettle... [​IMG]


    Served with grilled maple bourbon pork belly wrapped pineapple and steamed corn.

    When sliced in half, the melted cheese flows... [​IMG]

    Halved white nectarines and white peaches sprinkled with vietnamese cinnamon...


    Grilled on the trusty and dusty kettle over indirect heat...


    Served over Cognac Bread Pudding and drizzled with a burnt caramel sauce ... [​IMG]

    Key to this burger is a very high heat sear. My kettle has a second charcoal grate that raises the charcoal to within an inch of the cooking grate.

    So many variations of this burger.. [​IMG]

    Add: 

    mushrooms-I had all intentions of adding mushrooms last night, ended up sauteing them, in a little evoo and garlic, and adding on top. [​IMG]

    sauteed/grilled onions

    garlic

    queso fresco and roasted chilies

    cheddar and pineapple

    The only limit is the imagination...

    I do believe it's aptly named as "trusty and dusty" and I do consider it well seasoned. [​IMG]

    It's been living out on my deck, without any coverage, rain or shine, for 7-8 years. It gets a bath every winter season when the rains come. With the drought and all, maybe not quite as often as it needs. [​IMG]  

    Occasionally, the local denizens(foxes and racoons) visit to lick the drippings off the ash catcher tray below the kettle, in lieu of a bath... [​IMG]

    I do clean the cooking grate religiously before every use with a wad of foil or wire brush. [​IMG]

  14. Revisited my cheese stuffed burgers tonight for a quick 'n easy dinner...

    A little variation this time, with a different cheese and toppings...

    ...went with an Irish cheddar infused with Guinness... [​IMG]

    ...and topped with fresh tomatoes, avocado, grilled/caramelized onions and a smear of garlic aioli for lube...
