sfprankster's (mis)adventures in St. Louis-Pork Ribs

  1. It's going to be a busy day at the sfprankster household, playing with fire. [​IMG]

    The plan is for chicken wings on the rusty 'n dusty kettle and St. Louis ribs, corn and spring onions on the WSM

    We're on the road again this weekend for another work/play trip, heading up to the California Gold Country/Sierra Nevada foothills for an event, Amador Four Fires. As always(well almost [​IMG]  ), I'm getting the WSM prepped and ready for some St. Louis ribs to take on the road with us. [​IMG]  

    St. Louis Ribs

    It's been awhile since I've done some ribs on my WSM. Since we recently found pork spare ribs for $1.89/lb at a local market, no better time than the present to make enough for tonight's dinner and some extra for our road trip this weekend.

    I'm going for the low 'n slow smoke(225-235), over a combination of pecan and sugar maple this round.

    To put it bluntly, I whacked the spareribs into St. Louis ribs and rib tips(chef's treat [​IMG]  ) for today's smoke. This is easy enough, even a chocolatier can do it... [​IMG]

      

    Since tomorrow is Cinco de Mayo, I went with a Mexican inspired rub...

    ...salt, fresh cracked black pepper, garlic, onion, cumin, coriander, Mexican oregano and a pair of chili powders...

    Fresh fruit salad with white peaches, yellow nectarines, banana, cantaloupe, pineapple, red flame grapes and a squeeze of fresh lime...

    And street corn, sfprankster style...


    Racks just about finished...

    Lubed with my tomato, honey and roasted garlic sauce...

    Need s a little time to tighten the lube slightly...

    Minor probe malfunction...

    Sauce dripped onto the tip of the probe and became baked on insulation... [​IMG]

    Nice to have extras in a pinch... [​IMG]

  20. Thanx for the points!!!

    It took much longer than I planned with the probe malfunction. I was getting temperature readings 35*-50* higher, with the defective probe, over the actual chamber temps.

    These ribs used the 6-0-1 smoking method. No foil, nekkid all the way, just a quick lube, 60 minutes before the end. Total of 7 hours in the WSM[​IMG]
