Selling sausage at grocery store question

Discussion in 'General Discussion' started by beausmeatmarket, Jan 5, 2013.

  1. Why is it that most of the sausage you buy at the grocery store is pre cooked/ smoked? Does it have something to do with the USDA? I am opening a meat market soon and can make and sell fresh sausages all day. I just find it odd that most people do this since it takes them an extra step in the process.

    Thanks

  2. I don't completely understand the question, it's the nature of some sausages to be fresh and others cooked.
If you're talking about pre-packaged and cooked commercial sausages like Aidells, it's a matter of shelf life.

It's wise to familiarize yourself with all the appropriate rules and regs before you even consider the venture.
