Hello everyone,
My name is Charles and I am from Texas. Traveled around in the military for many years, tasting the fine foods of other cultures. I have lived in South Carolina, North Carolina, Virginia, California, Hawaii and Japan. I have also traveled to Scotland, England, France, Germany, Switzerland and Alaska, plus most of the lower 48 states. I try to use cooking/smoking methods I have seen others use. Some of them turn out great and some not so great. The best food I have encountered was by friends I made in Hawaii. The Hawaiians, Samoans and people from Guam filled my belly on many occasions. I am self taught and hope to learn from the people on this site. I hope only to get better with your help. So far, I can do a fairly good job with ham, Italian sausage, sirloin steak and chicken. Would love to learn to do more. NO FISH OR SEAFOOD OF ANY TYPE!! I'm allergic

welcome , glad your here... I also have partied and bbqed with chamoans( Guam Natives), they are a great people and they do consider bbq a bit dif then most of us. But it was all fantastic... again welcome.
