And so am I. Picked up a two pack of chuckles at Costco the other day and decided to smoke one today. I've really been craving beef and briskets are still ridiculously priced right now so it seemed like a good time to try smokin a. Chuck. I rubbed it down with some SPOG I had leftover from pork chops the other day plus a little more black pepper. Put it on over oak at about three thirty running about 275-300'. It seemed to stall at about 160 about a half hour ago so I wrapped it and I'll let it ride to about two hundred. On that same trip I also picked up a huge pork loin. I cut three pounds off for bacon and cut the rest for chops. But, I had a bit of a heel left over Soooo..... Snack Time!
