Second try at ribs

Had some ribs in the fridge that needed smoked or frozen, so I decided to smoke them. After opening, I found about 1/4 of the rack to be frozen. Since this was a spur of the moment decision, and we wanted them for dinner, I cut the frozen ends off and stored for later.

I used Jeff's rub, used the 3-2-1 method. Wind was really whipping here today, and I had trouble keeping temps in range. At first, she wanted to run at 270, then cooled off to about 220. I rotated the ribs for the first few hours to try and keep them even. I wrapped and added only more rub and some apple juice.

Actually left them on and wrapped for 2.5 hours since the smoker kept dropping temps, even with added coals. I unwrapped, saved the juice, put the ribs back in for 45 minutes. I used the juice to combine with our store bought sauce and heated it up for a few on the smoker, then put one coat on the ribs.

I pulled them off, covered with foil, and let them rest about 20 minutes. I steamed some broccoli and made mashed taters.

The one rack was over done and fell apart taking them off the smoker, which is fine, wife likes em that way. Second rack had a little chew which is how I like them.

Just uncovered. U can see my wife's under mine, falling apart.

All plated up. No other cut shots as the wife started consuming the second I called her in.
