OK this is my second try at baby back ribs ( like who can mess those up).  I think I overcooked the first rack way too long.  The dog still enjoyed them.   However the second try a few weeks ago, was much better, but there is room for improvement.  Smoker temp was 250 and they cooked for around 4 hours or so.  The final 30 minutes they were brushed with a teriyaki glaze.  I used Arthur Bryant rub.

They had good flavor and tenderness.  They were not fall of the bone, but were tender with a nice bite.  My camera date is wrong,  and it keeps messing up the date.  Won't let me update to correct time anymore.  Time for a new camera.

Tasty looking ribs, nice smoke! Nite through not fall off the bone is the texture I like. A good test is to grab the rack with your tongs about a third of the way through the rack and lift off the grill. If the rack bends 90 degrees and doesn't fall apart you are done.

Smoke away!!!

Nice looking ribs. I usually do my BB's about 5 hours at 240, and then do the bend test like DS said. But I like mine fall off the bone tender. Really nice smoke, thanks for posting. Happy smokin', David.

OK , good idea about the bend test.  Will try it next time.  I think it was closer to 5 hrs cooking time.  Thanks for the tip!
