Seasoning for Weiners

Discussion in 'Sausage' started by beavercreek, Dec 28, 2011.

  1. I am going to try making weiners for the first time and want to start with a pre packaged seasoning mix. I was looking at Curly's Sausage Kitchen for their weiner mix.  Any opinions on Curly's or any other brand? Thanks.

I made wieners/franks a little while ago using AC Leggs 'Bologna/frankfurter Blend #125.

I was very pleased with the flavor profile. The franks were a bit hit. A very 'perfumey' blend of spices that really made nice-tasting franks.

We've done Curly's this year and last year and they are good, but remind me a little of bologna.  I didn't like that as much, but we made more this year for my brother's family and my parents.  I ordered some from sausagemaker, which are a little less spicy but have a good flavor.  I'd maybe add a little black pepper next time and they'd be great.  I will do more of these next year for myself.
