Picked up a couple of cut cowboy steaks at the local meat dept the other day. Didn't realize these were bone in ribeyes until the other day.

Was watching the texas episode of bbq pitmasters where they had to cook the vegas steak as part of their entry.

I got to thinking, i have never eaten steak the way they fixed it there. In southern WV we have always grilled our steaks outdoors without thinking twice about it.

I seasoned the ribeye with 2 parts pepper, 1 part salt, 1 part garlic powder, and 1/2 part chili powder. I put about a spoonful of olive oil in the cast iron skillet and turned on high until it started steaming. I dropped the steak on until it was dark after about 3 or 4 minutes. Flipped and did the same. OH MY GOODNESS. You could cut it with a fork and the juice ran out of each piece. I will never, repeat never grill a steak again!
 
That's my Pops favorite steak, if its not fried he'll eat it. But he's much rather fry that sucker.

Sometime try a lightly spiced flour and dry the steaks first to form a pellicle then lightly dust then fry.

I laughed when I saw cowboy steak in the title, its a nice steak.
