Just joining this forum and already found some great ideas - thanks!  I've been smoking here in CT for about 20 years or so, using simple Brinkman hot smokers from Home Depot - certainly nothing fancy.  I usually smoke salmon and some other fish, but now I'm looking to make pulled chicken for a couple of friends who own the BFF Grill Food Truck out of Fairfield.  I've been smoking thighs recently but have done whole chickens and I think they've turned out pretty well.  My favorite things to smoke are mozzarella cheese and recently some Spanish cheeses called Queso Frier - I cut them into Twinkie-size portions, freeze them up then smoke them until they get close to the melting point.  Really good stuff, I think.  And I've also been making a smoked hot pepper combination that I've been marinating in Tequila, chopping up in the Cuisinart, then water bath processing and giving jars to friends & the boys at the BFF who like REALLY spicy food.
