The ingredients. I have been wanting to do some injected wings, but do them just a tad bit different. I took my base recipe, 3 parts franks, 1 part beer, 2-4 tbls butter (this batch took 4). Mix that all up, and here's the kicker I added 4 oz of blue cheese right into the marinade. I went ahead and simmered this all together. The cheese broke down a bit, but sti\ll not enough to keep from clogging my small injector. So I had to use the big injector. Which is not ideal for wings, I've shot hot sauce all over the kitchen before with it! Knowing what to expect I was extra careful. I only had one blow out the for the most part only soaked me with hot sauce. I injected the wings in the morning and let them sit in the fridge for 7 hours. I always pour the left over marinade on the wings.

Injected and ready to rest!

Had ABT's for breakfast! I mean why not its Super Bowl Sunday!

Fires up the mini sometime during the first quarter. 365 brand lump, cherry and pecan wood. I wanted to do these hot and fast, so I ran the mini without any sort of diffuser. Ran the mini right at 350°

These turned out fantastic! Adding the Blue Cheese into the injection was AWESOME!!!

Enjoy!!!!

I think next go around I will strain the injection through a sieve or try and find blue cheese that breaks down better when heated. It was a pain using the large injector for the tiny wings!

Looks very tasty ds

Nice job. Justin
Thanks Justin! They were tasty! Just enough left over for lunch today!

Those wings look great! Happy to hear that they tatsed as good as they look...

Curious minds want to know......Is that Snow White peeking from around the edge of your mini ?

Very nice, Case!  Those look amazing.  Blue cheese...cool twist on one of my favorite recipes.  Thanks for sharing!

Thanks Red! The blue cheese really made these wings rock!

Nice!!! Blue cheese right in the sauce, that's just amazing! If you can get your hands on an immersion blender, that works pretty well for breaking down pieces in a sauce.

Anyway, awesome wings!!!

Thanks Suie!

I used my immersion blender, and it did break up the blue cheese, but just not enough! I had hoped that the heat would've melted it but it didn't!

That looks AWESOME!  I gotta get me an injector.

So I see it's a mini (?) Smokey Joe ? or what is the setup?

And what is that gate valve for?

Mini-WSM made from a Smokey Joe Silver and a Tamale pot. The gate valves are for better air flow while smoking. Check out the Mini-WSM build forum here for more info. One of the best little smokers around.

I would love too try these, but not fond of hot ( spicy ) food.

The blue cheese really mellows them out. Franks original isn't super spicy (in my book at least). Next time you make a batch make two or three of them this way so you can try. The rest inject with a not so spicy marinade like teriyaki (my boys favorite injected wings). Then if you didn't like them your not out a whole batch. I'll do that quite often with whatever I am making make a small batch one way and a large batch a way that I know we like. On that note another great marinade to inject, strained italian dressing. Great on all cuts of chicken and beef!
