i though my spice mix had sodium nitrate in it but it doesn't , I want to smoke these on Tuesday, is there a way to make sure they are safe without instacure or sodium nitrate .?

I know I should have gotten it anyway just to be sure but now its to late to order it and get it here ,  this is going to be my 1st attempt at making smoked d sausage
 
Are they already stuffed?

If so, hot cook them. Over 140 in 4 hours.
 
no , I haven't done anything yet ....  but I have 25 lbs of meat thawing to be ready by Monday or Tuesday . my meat grinder is due to arrive on Monday and I wanted to get started asap
 
Hot smoke them at 180 degrees and take em to 160 degrees

thanks , just didn't want anyone to get sick !!!!  instacure    will be ordered Monday morning for sure .
