Sausage stuffed loin

I had a little whole loin I picked up pretty cheap last week.
Not sure what to do with it I looked around to See what I had.
I saw the sausage in the freezer and figured that should work.
Since I was rubbing the loin the day before, I let the sausage semi thaw.
Figuring it would thaw the rest overnight.

I was going to wrap in bacon but decided against it.
I cut a slit into the loin to allow an area for the sausage, thus leaving the loin whole.
With the sausage being semi frozen it really held it's shape creating a good cylinder shape.

I mixed in the pork juices with some chicken gravy and poured it across the slices.
It didn't need the gravy but it was good!

Good stuff!

I've got another one I'm going to try a new concoction of sausage instead of just regular breakfast chub.
I thinks it's going to be awesome!

No spoilers though, You'll have to wait until its done to see it.

I've been told that brauts or Italian sausage would be ideal.
I'll have to try that too.

I have four huge loins so I have plenty of experimenting to do.

Nice job, Glued. Particulary like the retention of the structural integrety of the loin.
Might I suggest making a "star cut" next time for an interesting variation. Boning knife inserted at about every 72° around the loin center :{)

Richtee is on to something.......Valentines day cut the center in the shape of a heart to stuff and let your other half slice it when its done.
 
Ok who's going to make the long cookie cuter tube to put shapes in the center of the loin?
