Sausage Sticks/AKA Slim Jims

    Got 2.5 lbs of smoked sausage sticks AKA Slim Jims going. Mixed and stuffed into sheep casings. Using my A-Maze-N with hickory pellets in my Bradley.

    I mixed the cure with some distilled water. PID running 130 thru 165. BBL

    Dont really need to say much as y'all know how this goes.

    Looks good.

    Lookin good so far Nepas, never used Sheep casing before, I will have to give it a try one of these times.

    A full smoker is a happy smoker

    My PID went out again, this is the 4th time. So i had to improvise. 225 in my DC is giving me an IT in the Bradley of 156

    nepas nice job on maintaining the heat. Someone posted a mod like that for MES. I have sticks finishing up now 1hr more.What are you burning for the heat?
