Sausage, Peppers and Onions

  • After a few hours, the Kielbasa and Sausage is removed and allowed to cool down a bit before placing into the refrigerator.




  • Slicing the veggies

 


 
  • Butter is added and pot is covered and placed on very low heat about an hour.


 
  • Peppers are sliced and added.


 


 


 


 


 


 


 


 


  • Veggies are simmered about another hour.

  • Salt and Pepper

  • Two cans of Diced tomatoes are added

 
  • Beef Base

 


  • Tablespoon of Oregano, Basil, Parsley and crushed red pepper are added.

  • One cup of red wine

  • Sausage is sliced and added.

 


 


 

 


 


 



 
  • Garlic is added last

 


 


 



 
  • Sauce is thickened with flour, I really wish I would have waited for my wife to get home with the cornstarch, the flour clouded up the gravy too much and you could not appreciate all the colors going on in the recipe.
 
Yeah, SQWIB. Shoulda waited. But, the money shot is the one before the garlic. Man, does that look soooo good. I'm gonna have to try that. Who doesn't like onion,peppers, garlic and sausage? kevin
 
I did that with a nice beef stew, a while back. Had this beautiful stew going on and then went and put flour in it and Bam! the beauty was gone. I hate when that happens. Coulda just thrown it out then. kevin

Dang it man that looks good,,,, perfect in the dutch oven inside a wall tent at Elk hunting camp - will have to give that a try
