sausage in the freezer

  1. how long do the sausage last in the freezer, just maybe wrapped in plastic wrap. then in freezer paper. if i seal it in a plastic bag will it last longer? whats the freezer life on the sausage before the taste changes? reason i ask tyhe sausage i made last year, fried some up this morning, and seemed like the taste was different, and no more calogen cases, it was tough.

    Just wrapped as you said 6months. Vac packed 1-2 years.

  5. WOW, i though you could keep them a lot longer than that, no need to make big batches anymore.

    Are those suggestions for best taste or for safety? I've kept sausage 6-8 months... as long as I can keep freezer burn off it, I've kept it, but I would avoid that if it's a safety issue.

    I dry my sausage in the fridge overnight. I actually do that with all meat I freeze... I don't have a vacuum sealer but from doing the drying thing I get 6-8 months freezer burn free of everything.

    Man I have had sausage in the freezer for a couple of years in vac bags & they were fine.

    No freezer burn, & same taste!

    Quality and Safety.

    Vacuum sealing is the best way to store food for freshness and food safety. Like Al  said. I've ate sausage out of the freezer 2 years later and it was as fresh as the day I made it but if i don't vacuum seal, after about 2 months freezer burn starts to happen and its cash in the trash for me

    Its shocking whats in our refrigerators. Usually if it hasn't changed color and started to odeur,  I'm ready to cook....[​IMG]

    Boukjo, that link says:

    "Freeze sausage if you can't use it within times the times recommended for refrigerator storage. Once frozen it doesn't matter if the date expires because foods kept frozen continuously are safe indefinitely."

    I'll add quality along with safety to appease the concourse. The chart is just a guideline.
