sausage guys need advice please

I will be making 2 kinds of sausage this  weekend  tomato basil and chive and also roasted red pepper and garlic .Should be pretty good   does anyone have a good summer sausage recipe then could share  or pm that be amazing thanks again guys .
 
I've never done summer sausage, Tom, but you've gotten my curiosity up about the tomato and roasted pepper things! Are you using a kielbasa type base? Sounds like fresh, not smoked?

It's my first attempt I'm using pork shoulder and all fresh ingredients  and hog casing. I will cold smoke then toss on the grill and see how that is and  just straight on the grill with others  to determine what i prefer

I would not recommend cold smoking if they are not cured.If they have the cure you are safe

What tropics said! If you're planning to cold or warm smoke you need to use a cure! If you plan to grill them that's great, just keep them refrigerated or frozen like any fresh meat....

The gears dont touch the food though.  Can I use WD40?

It will run down and onto the plungers. I would not use wd-40. I use food grade silicone. A can lasts forever. You also need to lube the gasket on the plunger. Use the same silicone spray.

If you really don't want to get the food grade silicone then use vegetable oil or olive oil. Just be sure and wash off the gears after each use so it doesn't go rancid. Same goes for the gasket, but that's a given as it needs to come off the plunger and be washed after every use anyways.
