Sausage for my first smoke!

  1. So I am planning on doing my first smoke tonight (weather permitting) its snowing right now.  I have read some of the previous threads and from what I am reading I have some ????  

    Can I just go to butcher and pick up some Hungarian/ red hots or anything that needs to be cooked? I am guessing because I am cooking in the smoker I need to get them to a higher temp? 160 internal?

    Should I use water and smoke just water?

    What temp should I be smoking at?

    If I missed anything you think I need to know please let me know.

    If your going to get pre made sausage that has not been cured for smoking then you will need a heat of 190 and above not exceeding 225. You can apply smoke to this and a water pan if you like.

    Tip

    Pre heat your smoker with the water pan before adding your sausage.

  13. I am still at work.... I get off in an hour and will be stopping at the butcher shop for sausage and gettting home to start the smoker!
