I'm cooking Scottish Eggs during the holiday weekend. looking for a good sauce to use!

Is vote for a Sirracha dipping sauce 1/4 mayo, 1-4 tablespoons Sirracha, 1 tablespoon lime juice. You could do a mustard sauce or a curry sauce too.

Totally Agree, I might add a cane vinegar to the stone ground mustard if it was me with just a touch of cane syrup or agave to balance
Maybe me just my southern drawl commin out here, but biscuits and milk gravy sounds good.
Boiled eggs surrounded in sausage, covered in milk gravy over bisquits. Not too sure about the bottle of scotch though.
