Saturday Spares!

    Well, there's more than one way to skin a cat. Can't get into Photobucket so I'll try ImageShack.

    Wanted to post some Q-view of some spares I'm smoking today. 3 slabs below before trimmed to St. Louis style. Not sure why this image is smaller than the rest.


    Trimmed, rubbed and ready for the smoker.


    Some ABT's stuffed with chicken, ricotta, parmesan, cream cheese, and spices.


    And then onto the GOSM. The glare in the thermo is actually from the sun if you can believe it![​IMG]

    Lou, that really looks good so far. Wish I would have smoked something today.
    Can't wait to see the finished Qview. :)
  3. Looking good Lou, it's amazing that bright shinning thing in the sky finally showed it face here in northern illinois also, it's an amazing sight. Where are you guys finding those nice japs for the abt?? Went to the store and all they had where ones that where smaller than your pinkie finger.

  8. Fine looking chow Lou, I agree with everyone...great idea with the ricotta in the ABT's. I will certainly be trying that next weekend.

    Spares turned out good but I thought the taste was a little hammy. Too much smoke? No one complained though.

    2 slabs and some of the trim. Sauced the one on the right.


    Wife split a slab with me. Had some garlic mashed red skins and asparagus in balsamic vinegarette.



    ABT's were awsome. Thinking I might stuff some pasta shells today with a mixture of the same.


    This will be my last smoke for a couple of weeks as we'll be in the Dominican Republic. Not that I'm trying to rub it in![​IMG]

    Yeah, I always tell people, if you post alot of photos.....have a second photo hosting site, just in case.
    Are you having problems getting directly into your album OR just the home page of Photobucket?

    Great looking grub by the way. I am doing chicken wings, legs and ABT's today.

    Nice, Lou. Seeing the sun in southeast MI this weekend with high's in the 30's is basically like spring I have come to know. Enjoy the Dominican.

    I did a butt and fatty for some friends and I as we watched Tenn and Memphis hoop game Sat night.
