Morning all,


Have two racks of spares all trimmed up and ready for the smoker!! It's going to be another glorious weekend. I'm going to throw them in around 1030-11am and have them for dinner.

Going unfoiled all the way and maybe sauce one or both, haven't decided yet.
 
I still flip-flop between foil or no foil. When I use foil, I'm glad I did. When I don't, I'm glad I didn't. I guess my favorite ribs are the ones I'm eating at the time, whether or not they were foiled. I do prefer sauced though, whether it was before, during or after.

I hear ya there! I prefer my ribs to have a little pull off the bone...but foiled FOTB are good too, as long as people are eating and not complaining they're good! I actually prefer all my ribs dry but I'm going to sauce one rack for the wife and see what she likes better.

I also told her I'm only going to drink two beers while smoking... My first one and last one !! Lol.
 
Should be tasty! For pork ribs I don't fool, and like you I don't sauce for myself. Beef ribs I foil as I feel they benefit from the braise.
 
Finished and plated shots:
The spares came out very good. One rack was a store bought rub and the other was a homemade rub. I liked mine a little better but the commercial one was yummy too! Ended up saucing both racks.

The ribs were smoked unfoiled for about 6.5 hrs....all in all, a good day!!
