Saturday Pastrami

    well another pastrami on the way..been a while for me posting but who knew 2 kids were so much work.. moved to a house ,, beats smoking from a balcony....its about 3 1/2 hours since i began smoking it, i house-cured 2 deckle / points for 10 days, then rubbed w a little oil and spices went on, let it sit for 2 days till this morning,, will keep u posted

    took them out just now, 4 pm,, will wrap in foil and chill overnight , tomorrow i am going to steam them until heated thru and fork tender..

    well put the kids to bed, and was time to try some pastrami, steamed it to around 200, and digged in...

    looks delish....steaming IMO, makes a big difference at the end of the long smoke

    That looks great - Never done the steam thing before can you enlighten me some??
