Saturday is the day I come back to Charcoal

    Althought I really have enjoyed using my small GOSM gasser, and will continue to use it for certain items(ABT's, etc.), I have been missing the charcoal taste of bbq smoked using lump charcoal. I was even adding lump to my cast iron pan at the bottom of the GOSM to see if that would do it, but some chicken wings I smoked on my Weber kettle was the kicker. I did some side by side on the gasser, and the Weber, and the difference was night and day to my guests and my taste buds. I test drove a WSM for a couple months this past summer, and liked it, but the price tag wasnt something I could get at the time, so the GOSM was a good addition at the right price.

    So for x-mas my mom is getting me a WSM 18.5", and I am going into Chicago to pick it up this Saturday. She would have gotten me the 22", but I didnt want to hit her up for that much $$$ for a present. THe only bad thing is I cant open it up and use it til x-mas eve... gonna be a long month looking at it in the box...[​IMG]

    As a side trip I am going to Peoria Meat Packing in Chicago, they have a retail store attached to the processing plant, and have great prices, and selection of pork, and other items, mainly pork. They sell whole pigs if you pre-order a day ahead of time, and the retail meat is in a cold room, laid out so you can pick through the stacks of spares, bb's, butts, sides of pork, snouts, heads, etc. Customers have to wear plastic gloves. I plan on getting some spares, and a couple boxes of hot links.

    I have smoked on a Gosm for years and love it. Now since I have inquired a brandera charcoal I have smoked on it twice and I didn't really taste the differance but then I smoked a corned beef and a fattie so maybe the other flavors overpowered the smokness of the charcoal. Maybe I'll keep tring.

    dont get me wrong the GOSM is a good smoker, and mine will still be used alot, I have been wanting a WSM since I used one this past summer, and am just happy to have the opportunity to get one.

    Immediately popped into my head-You place the call, as the guy hangs up he walks into a back room where a pig is hanging out, points at him and says "Tonight...You!" and the pig knows.

    So are you going to season it Christmas eve and fire it up the next morning?

    Man, I have to say I am jealous of that. I would love to walk through and pick out my stuff like that. Awesome stuff, would love to see pics of that but probably not allow cameras in there. Enjoy my friend.

    Once you use the WSM, you'll be tossing that GOSM in the garbage.....or baking pies in it maybe. [​IMG]

    got it, barely made it in before they closed yesterday(darn hanging out a bar).

    18.5" 2009 model, just waiting for x-mas eve to open and assemble, and x-mas day to use.

    That has to be tough seeing it there and not being able to use it. Congrats on the purchase.

    thanks rick, it will be tough, but its only a month, and the GOSM, and the Weber kettle are good units.
