I had a busy weekend, so I am finally getting around to posting my Saturday feast. We had babybacks, boneless skinless thighs, my first fatty, ABTs, beans and tater salad. I told my wife I was going to do all the cooking, she also insisted that I help her clean before company came over. Needless to say, it was a very busy day. I usually enjoy a little peace and quiet with a cold beverage out by the Char Griller, but not this time...

Went to Costco first thing Sat. morning to get some replacement ribs. Neither the wife nor I were crazy about the cryovac smell of the first racks we opened Fri. night. Costco refunded my money, no problem. The new ones smelled fresh and clean, and I threw the others out. Just couldn't wash the smell out.

Here are the ribs about an hour before cooking. I picked up that rub at HEB awhile back. It is pretty good, but I will start making my own as soon as it is gone.

Ribs after two hours. Spritzed with Apple Juice and Capt. Morgans. Smoking with some pecan chunks I found at the store. Ready to foil... Wrapped each rack in foil and poured about half a cup of apple juice in with each rack.

Here is the finished product. I left one rack sauceless for leftovers.

Here is the rest of dinner. You can see my fatty in the pan, along with chicken thighs and ABTs. Got the idea to wrap the thighs in bacon from somebody here in SMF. They came out real juicy, but not much smoke flavor. Fatty had grilled onions, green pepper, jalapeno, bacon, and cheddar. Everyone thought it was great.

Good call on the ribs, I always give everything a good sniff, I've always said when it comes to food, "when in doubt, pitch it out" (or return it).
