Did a couple of racks of babybacks today. Weatherman said it wasn't supposed to rain but it looked like this.



So I was smoking under cover today.



It's been kind of hard to please the whole family when it comes to ribs. My wife does not like a multitude of spices and she and our daughter can't take much heat. My son and I like heat and rub, glaze and the whole nine yards. I asked my wife how she wanted the ribs. She said like Tony Romas. I figured, hell that'll be easy. I'll just boil them and drown them in sauce.

But I ain't boiling ribs for anyone. Not even my wife of 20 years.

Finally hit on a combination that ALL of the family liked. For the women, I went with completely naked ribs, spritzed with apple juice and Jim Beam, added a little spritz to the foil along with a light coating of Sweet Baby Rays, then glazed with more Sweet Baby Rays after the foil. For the men, I slathered it with mustard, rubbed it with Mad Hunky Rub, spritzed with Black Cherry Dr. Pepper, foiled with the Dr. Pepper and glazed with a conglomeration of foil juices, honey, brown sugar, grenadine, and Sweet Baby Rays. I'd tell you the exact amounts but even I don't know what they were. I was just trying to get it to thicken up and it still turned out a little thin. Smoked them on the drum with hickory.

I would have taken pics of them sliced but we started eating them too fast. I did manage to get a pic of the half racks or so that were left after round one.

They were a HUGE hit. Men and women were both happy.

It's Tall Fescue. It's green all year round. I usually have to mow it once or twice in December and January. In fact, if it ever stops raining here long enough for the ground to dry out, it needs to be mowed now.

When you made the ribs for the ladies, did you add any salt and pepper before they went into the smoker?

I offered to, but my wife being the skeptical one that she is wanted them completely blank except for the Sweet Baby Rays. They salted them at the table but said next time maybe it would be good if they were salted before hand.
