Im totally new to smoking...I just smoked some serious burgers yesterday and was not very impressed. I can't keep the heat constant and I don't know what I'm doing wrong. my first attempt was with a small pork butt and some st. Louis ribs...couple chikbreasts wrapped in bacon w' hardwood briquettes as fuel source n I used Hickory chips and smoked for 4 hours the temperature still was barely 200degrees...ended up finishing the porks in a slow cooker n luckily chicks were done checking w a digital therm. I live in southern maine...born n raised in S. FL...my daddy was a redneck hillbilly from Boaz, AL (blessyouDaddy!) And MAN could he grill n smoke meat like you couldnt believe...so, this is my new hobby and its in my DNA so im ready to learn and happy to experiment! M'name's Brigette.
