Hello all,
I've been lurking here off and on for a couple of months now, but decided to go ahead and join up. I'm no stranger to forums as I'm a member to a few different ones, mostly motorcycle oriented. I'm still getting acquainted with the layout of this place.

I've been doing some smoking over the last few years on a little Brinkman Vertical cabinet unit with less than stellar results, but after doing some mods to it a couple of months ago I've been a smoking fool with better results. What mods you may ask, well I'll tell you. I enclosed the bottom of the cabinet with some SS flashing and mounted a Brinkman offset firebox. Added some nomex gasket to the door and bought a digital remote thermo. I also just bought a ThermaPen that I used for the first time yesterday. While I'm pleased with the results of all my recent cooks, except turkey (I just can't seem to get the skin right), I'm looking to build my own UDS. That's the motivation for me to join here, to research the do's and dont's of building a UDS. I also dream of one day building an insulated vertical stick burner with dual cooking chambers that I have a vision of in my head.
Anyway, I look forward to learning from everyone and maybe someday will be able to help someone out myself.

Glad you joined the group. The search bar at the top of any page is your best friend.

Hey dtj,

Im up in the Rome area.

I currently have a Brinkman vertical cabinet. Its a few years old and I dont think they make it any longer. It does a decent job since I installed an offset firebox and gasketed the door. But it has me chasing temps all cook long.

Welcome tag- Canton, Ga here. Been smoking about 3 months. I still chase my temps a little but can nail them down pretty quick. I also took the advice of the experts here and fab'd a charcoal basket out of expanded metal. Which gives me longer burn and more even heat output.
