Salt cod recipe anyone?

Hi all;

I didn't know where else to post this.

Anyone have recipes for salt cod? Smoked or not. Soup, stew, pasta, etc.

I'm trying it for the first time. I know there's recipes online, but this place is a good knowledge base.

I was thinking of potatoe fish cakes, as I have made them from unsalted cod.

I don't know if you are salting your own cod or buying the already salted stuff which is hard to find.

If you are working with the prepared stuff that comes like a brick, do a quick search on Bacalao which goes by different spellings in different places across the pond.  You will find more variations on that recipe than you would imagine.

Baccala, an Italian recipe. Varies widely. The salt cod gIves a distinct texture that I have been able to duplicate with frozen cod fillets or pieces (best). I can post both recipes tomorrow.

I cut my teeth on that, when my mother made it (a long time ago, I am 78) it wa a stew, potatoes, carrot s, canned tomatos and such. I have had it in Basques restruants.

My wife makes a cod with drawn butter sauce, which has eggs also. Its served over mashed potatoes and usually a veggie and salad. Its amazingly good.
