My wife has caught so much Salmon, I need to cook some to make room for more.  Thus, I want to do my first Salmon Jerky batch using my big chief electric smoker.

1.What is a typical recipe for this?

2. Do I need jerky cure for fish?

Any other words of wisdom?

Thanks

Craig

Jhnny,

Are you doing Steelhead?  If so, as per the thread you supplied as well as other's, Steelhead is very oily and will probably take longer to dry as compared to Salmon.   I'll be doing a couple different Salmon Jerky recipes this weekend.  Maybe we should swap some finished product.  Where in the Bay Area are you?

No, for the first time just trying farm raised Atlantic before I move on to better. I'm over in San Lorenzo, I go over to Space Park Way in Mt. View every couple of weeks.

Tomorrow, I'm doing 3 different Jerky recipes as well as smoking two Salmons.  Big day.
