Salami mold question

So first time make some salami I know not all mold is good mold. But slightly curious about this. I used some B-lc-007 starter in the meat but didn't spray down the salami with bactoform. It's been a week now and the mold has formed but it's been spotty. Should I let it be? Rinse it down with vinegar? Or toss it? I didnt have beef middles so I used hog middles, not sure if that matters. I used len poli recipe for Salami Soppressata Roman stlye



 
Looks like nice white mold to me. I wouldn't change a thing.
If it was black mold I'd toss it. Green mold I wash off with vinegar, but a lot of people will leave it.
