The only good answer with brisket is that they take a while. There just isn't a hard and fast answer. You need to cook to temp and that varies with weight, thickness, your smoker, etc., etc. First off I would check out the basic brisket smoke in the beef sticky section of the beef forum. Lots of good basic information there. Jeffs tutorial in the how to section on the left side of the home page is also good info. Many brisket smokers do the all night approach. You will likely get done well before serving, but it can always be heated up or kept warm. Briskets are less forgiving than pork butts or even ribs to a degree, but well worth it. You can do whatever you want with the corned beef, smoke, boil, oven roast. Essentially it is a brisket that has been brined with pickling spices.
