  1. All mixed up ready to stuff

    Seasonong mixed up.

    4 lbs ground pork butt

    3/4 lb swiss cheese

    1.5 lb corned beef

  5. Money shot grilled up ready to eat. Pretty good would probably add some more thousand island dressing.

    1/2 cup thousand island dressing
    1/2 cup water
    1 Tbs kosher salt
    2 tsp white pepper
    1 tsp nutmeg
    1 tsp coriander
    1/2 tsp celery seed
    1 1/2 tsp caraway seed
    1 1/2 tsp paprika
    1 tsp ginger
    1 tsp ground mustard
    1/4 cup NFDM
    1 1/2 corned beef cubed
    4 lb pork
    3/4 lb cubed swiss
    3/4 sauerkraut

    Mixed & stuffed into hog casings.

  10. Thanks Al. I do like it & my 7 year old made me grill some up for him. I would probably keep the kraut out & add more thousand island because most of that flavor is lost. I may also look into powdered/dehydrated thousand island for a more concentrated seasoning.
