Most of what I've read about rubbing a butt has said to do so 24hrs. before you smoke it. Is there any harm in letting it sit with the rub on longer?

I'm doing a cook on Saturday. I plan on having the butts on the smoker around 5 am-ish. I want to prep them a head of time, but I will be at work all day tomorrow so my choices are to rub them tonight and let them sit until Saturday or Rub them as soon as I get home on Friday. Opinions? Ideas?

Thanks all-

P.S. Went to Hy-vee and got in on the $.99/lb deal...We'll be eatin' butts 'till the cows come home!

Heck do it tonight then again just before you put em on

Heres my .02 worth.....
Rub does not penetrate INTO the meat.
Depending how much salt your using, it will start drawing the natural juices out.
It can also start the curing process which will give ribs a hammy taste and also starts breaking down the flesh and making the meat mushy.
I rub all my meat....

....while the smoker is warming up.

O.K., bring it on........

P.S. ask Joe, thats how the pros do it!! lololol

As a newer smoker I would hate to give bad advice, butt!!! I always marinate for 24 hours and rub my butt just before putting it into the smoker. I coat the butt with a mustard to make the rub stick and you won't get a mustard taste.

Thanks for all of the great advice here. My main concern was whether or not leaving the rub on too long would dry it out. I'm not convinced that I want to prep them tonight. I'll probably just prep them tomorrow night. They won't sit too long wrapped with the rub that way...unless, of course, I hear something brilliant from someone else here that convinces me otherwise. I always ask here first and it hasn't failed me so far.

Thanks again all...
