Tonight I decided to go back to what's been good for me before! Thighs smoked in butter! Did them 2 ways one with only butter the other with butter and red hot. Rubbed them down with a homemade rub of roasted garlic, roasted onion powder, salt, smoked paprika, chili powder, Ancho chili powder, white pepper, and Chipotle chili powder. Cooking them in pan at 275 for about a hour and 45 minutes then removing them and placing them skin up for 45 minutes and basting with the butter ever 15 minutes. Enjoy!
