Hi Smokers,

I am Joe from Bridgeport. CT...relatively new to the smoking world, however I have been enjoying smoked products all my life from the various Eastern European butchers (Hungarian, Slovenian, Polish, etc) in the Bridgeport area (as my size would attest).

Picked up a Masterbuilt 30" Electric smoker about a year ago, granted it is not like some of the fantastic pieces of equipment I have seen on this site, but it has exceeded my expectations so far.  I am surprised by the amount of smoke it actually produces you just have to make sure to keep adding the chips to it.

So far I have done mostly ribs, pork butt, fresh (home-made) kielbasa, chicken wings and chicken jerky (mostly for my German Shepherd) but this last spring smoked about a dozen fresh rainbow trout my brother and I caught and they were delicious.  Right now I am experimenting with some chestnuts

I am glad to find this online site where I can read some stories from the more experienced among you and try some of your ideas out for myself.

  Thanks a lot...

Joe
