Hello there, I am new to the smoking process. recently purchased a Bradley smoker. absolutely love it. makes things pretty easy for a rookie like myself. I normally smoke wild game and have been using the Hi Mountain kits for now until I get the hang of things.

was wondering what is the recommended smoke flavour for Italian sausage>

any help is welcomed.

Hello Bob and welcome to the site.

Italian sausage isn't normally smoked but folks around here are prone to smoking anything they can fit into a smoker or smokehouse. I suspect that any of the sweeter smokes would do well, especially if you don't hit it with much.  Heavier, stronger smokes are more likely to mask the sweeter floral notes of the fennel and, if used, anise.  I've used apple, cherry and hard maple with good success and wouldn't hesitaate to use most any wood in moderation.
