Hi, my name is Marc and I am new to the smoking game. I have just purchased a smoker from a company in Germany - BBQ Barbecue Smoker Round - Smoking and Grilling with Thermometer - Garden Sold by: DEUBA GmbH & Co. KG. I got it from Amazon after some umming and aahing and it was a small enough investment to come in under the wife radar of bad investments. We live in Hertfordshire, England and do like a good barbecue - even though the weather is not always in our favour. I have an electric barbecue (sounds terrible I know but good when it is raining. I also have a nice big proper charcoal barbecue for outside and if we are going big my brother brings his gas fired bbq and my mate Dave (who is a professional bbq man) brings his drum bbq for when we have a lot of people over. I am the cook all year round and like to experiment - we are strictly Kosher so it is fun trying to find kosher ways around great recipes. I am into heat and spice whilst the family are more sweet and sticky - but some of my friends share my passion as do some of my daughter's friends so we do spend some time trying to up the heat via scoville related ingredients. I also have a lot of South African friends who brai all year round - so I have a lot to compete with. Many of our friends are professional caterers and restaurateurs so I am always trying new recipes to wow them and get them to adopt in their restaurants. The smoker is the latest addition to the family and I am really looking forward to doing some beer chicken alongside brisket and beef / lamb ribs. I am also hoping to start doing some fish smoking as well - I do my own gravadlax so a couple of sides of salmon might be a great start. The main problem is that the smoker came with no instructions or recipes so I am going in blind - kosher meat is not cheap enough to just experiment with but I suspect I will not be able to go too far wrong - especially with some of the great ideas on this forum. So here goes and thanks for reading. I hope to be able to share some good recipes with you all and get some great ideas.
