Good Afternoon, and Happy Thanksgiving!

My name is Amy and I live in Virginia (I own a Catering business..so, maybe if I get good at this smokin' thing...it might become part of our regular offerings)...I am a "virgin" when it comes to smoking anything.  I have never used any type of smoker. Saw the masterbuilt electric smoker w/ digital read-out and thought - wow - that seems pretty easy.  However, I was very disappointed when it arrived only to find 4 recipes (none of which were for a turkey) and really no instructions on how long to cook (smoke) or at what temp...I think you get the idea.  I was finally able to get in touch w/ someone @ masterbuilt yesterday ...she kindly listed this web-site for additional information and sent me a temperature chart + recipe for the turkey.  As I mentioned in my previous entry - I purchased a 23 LB turkey breast and am going to attempt to smoke that bad boy!

I will look forward to any help and assistance that Smokin' Al or any other smokin' buddies can offer!

Best to all of you..have a blessed Holiday! Amy

Amy,

Welcome to SMF.

The most important thing to remember is the 40 - 140 rule.

Bird must go from 40 to 140 degrees in 4 hrs or less.

A 23 lb breast or bird may make this difficult.

Please take the free  5 day online course and read, read, read.

Welcome to the SMF Family....23 Pound Breast!!!...They must have had to Sneak up on that Monster to Kill it!..You will find a bunch of folks looking to help...Take the free E-Course, Search, Read and Read some more than ask away...JJ

Welcome to SMF - glad to have you here. Like Eman said keep it safe.

Welcome to SMF Amy. Glad to have you aboard.

Like all the rest have said, reading is very important part of being here.

It never ends, always something new to learn from everyone here.

But better then that, there a plenty of fine folks to answer any

questions you might have.

Happy Smokin'

Mike

WELCOME Amy!  Lots of friendly, helpful folks here.  Since we cannot look over your shoulder, send lots of photos, we LOVE photos. Since you already do catering, you already know about food safety. You're gonna do great.
