I live in Raleigh North Carolina and have always wanted to get into smoking meats and fish . Have tried it on a barrel BBQ with a side smoker that I bought from Lowe's now really got the bug and ready to move up to a smoke house. The first obsticale I need to jump over is the design of the house . Looking to build one about 4'X4'X 7' high and want to do hot and cold smoking. Meats,poultry,fish and sausage. I enrolled at this site to meet people with the same desire as I have and be able to learn from everyone. Would love for someone to take me under there wing and help in the construction part of my mission
 
welcome Roadrunner glad to have ya here. The smoke houses get a little tricky sometimes but it can be done. look for a post by Pineywoods on his build. it was about the same size and he does hot and cold smokes.
As for your name? are ya named after the bird the car or do ya just like to run the roads?
If I can locate pineys thread I'll post it here for ya.

First off welcome Roadrunner to SMF. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.

It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.

Hey Roadrunner - I'm over in Mebane, about 30 to 45 minutes from Raleigh. I've got a WSM that I've been experimenting with for the past 3 or 4 months. Haven't gotten the bug for a smokehouse just yet but I'm sure it'll happen. Welcome aboard.
