Ribs went on at 1:25

    Going with the 3-2-1 method. I have never done them before, so here goes. Using a commercial rub and smoking over peach pellets in my AMNPS.

    2 3/4 hours in I doubled wrapped them in a squirt of honey, 4 oz apple juice, and 2 oz bourbon. Fingers crossed.

    Reflection from the foil must have affected that pic. Sorry folks, that is the only one I took before putting them back in.

    I dropped 15 minutes off the original 3 hours due to some time constraints. I will make it up on the last hour if needed.

    If anyone heard a loud bang, that was my ribs backfiring on me. Dry and not the best flavor.

    Total cook time was 5 1/2 hours at 225-230*. Hmmmmmm... guess I should have done the 2-2-1 method.
