Ribs in MES ???

How do most of you smoke your pork ribs in the MES?

Do you the 3-2-1 method? or just put in and leave til done?

Put in then spray every hour til done?

What temp do you use? What temp cook to ?

Remove when done- foil wrap ? for how long?

The reason I ask is that there was a thread about butts in MES where people just put in MES and cook til ~200 then remove and foil, instead of cook till ~180 foil cook til ~195-200 then remove and let sit.

If your doing spares I would use the 3-2-1 Method. Some people mop every hour and some do not. I do mop every hour. as for the pork butt some people dont foil at 160-180 and some do.

If your doing BB then use the 2-2-1. On the last 1 part i usually finish on the grill for about 30 minutes or so. When I am done I do not foil I just eat

I don't mop nor foil them.
For spares, I dry rub them, put them on at about 230 degrees for about 6-7 hours and sauce them after they are done.
For babybacks I leave them on for about 5-6 hours.
 
You are going to get so many different suggestions for cooking ribs your head is gonna spin. I've done them almost every method and they are always great. I've cooked them from beginning to end without mopping or saucing or foiling and they turned out shweeeeeet! I've also done them the 3-2-1 method and had them falling off the bone. I would suggest if your gonna sauce them.... do that about an hour before they are doen so it can thicken. Your just gonna have to try every way you can... until you find that perfect way you like em....

As above. In my MES I use Curious Aardvark's rub overnight. The in with cherry wood at 230 for 2 1/2 - 3 hrs and spritz several times with apple juice (maybe some rum). Foil with some apple juice for 2 hours. Then back in for about 1/2 to 3/4 hours to dry the rub and firm them up. Enjoy!
 
I did some BB's on the MES a couple weekends ago and used the 2-2-1 method. They turned out great and everyone was pleased. I would think the 3-2-1 would work for spares also.
