So I decided to give ribs another round. Bought a rack of St. Louis style and cut it up to fit. Made then too short for the rack - whoops. Oh well wasn't about to throw them away! Then the typical Florida weather set in. Gotta love the portability factor of the mini. Weather shifted so I put on some leather gloves and moved it out of the rain.



2.5 hours in somewhere around 240


Also starting to gain a little faith in my cheapo brinkman thermo


They're foiled in some beer as we speak. I'm getting hungry! Pecan is the wood of choice today!
 
Nice looking ribs!!!

Rain or shine, the mini will get your smoke done on time!! My butt cook yesterday had a 1 hour thunder, rain, wind, hail storm dump right on it! Held rock solid!
 
That summer Florida weather is very consistent... When we lived in So Fla. Seemed like a 4 pm thunderstorm ritual....nice turn out on the ribs. Never used beer for the foil...gonna have to try that
