Ribs for the 4th (Q-view to follow)

    Got a great deal on a full slab of ribs today, and seeing how they were the only thing I wasnt impressed with when I catered 2 weeks ago, I decided I should experiment on the family.  Going to trim them up, and post some Q-view!

    14.86 lbs, at $1.88/lb. I couldn't leave them there!

    Keep the q-view coming as you go along....especially when you get them done.

    Ends trimmed off, and seasoned.

    Firing up the beast!

    Slab wood is cherry, stick wood is apple, and the jug with the skull and crossbones is finishing sauce. Planning on using that when I wrap the ribs.

    Well, I hit a snag. I didn't realize how late it is, and I'm not going to want to feed the family at midnight. More pics to come tomorrow.

    Back at it... Ribs went on at noon.

    Put the trimmings and beans on at 3:00.

    Ribs and beans are wrapped.

    Trimmings are cut, sauced, and ready to go back on for the last hour... Really tasty!

    Dinner is served! Calico beans and rib skirts.

    Of course now that I've been cooking for 7 hours, I don't want to eat. I'm figuring that when my catering business takes off it will double as my diet plan too!
