Ribs and Chicken. Celebrating the end of the snow!

    Well, it seems the winter thaw is finally beginning. And my poor little daughter is sick so I had to take the day off and take her to the doctor. I decided to take advantage of the sunny weather and throw a rack of ribs in the MES30 and since I like a full smoker, I threw in some bone it chicken breasts I picked up the other day. Ribs for dinner tonight and chicken for the week.

    Here's the rack of ribs with some mustard and jeffs rub.


    Game plan for the ribs is about three hours of smoke or until one row (hickory and maple) of the AMNPS burns out. Then into a foil pan with some maple whiskey and apple juice and covered for the next couple of hours and then however much time out of the foil they need to firm up some.

    Here's the chicken:

    Just a rubbed with some oil and a rub I like with poultry that has salt, pepper, garlic, anise, and sage.

    Gonna check the temp on those in about 45-hour. And pull them at 165 IT.

    Looking good- Still have several feet on the ground here in Maine.  I actually haven't even grilled on the kettle in close to three months!

    After about 3 hours I mixed my foiling concoction:

    About 3:1 apple juice to maple bourbon

    Here are the ribs

    And meat side down into the liquid:


    Some beverages on ice while I wait haha

    Here's the chicken all done:

    Probably need about 30 more minutes. Might be a little more fall off the bone than I like but I have to keep the wife happy!

    Nice looking job. I am sure the bride will be happy when she gets home. Hope your daughter is feeling better.

    Man that looks good, I still haven't got up the nerve to try and do ribs yet but I will at some point.

    Well... They turned out well. Nice and juicy and tender. I prefer the smoke the whole time no peaking no foiling method because they get a smokier taste I think. Go figure, my wife's stomach was bothering her so she didn't eat them. No good deed goes unpunished haha

    Overall a great success. Flavor was good, texture was good. Just want a little more smoke flavor.

    Thank you all very much! And the little one is doing better, now my wife is falling apart. Haha and I had a horrible reaction to my daughters medication. I'm severly allergic to penicillin and giving it to her today triggered this crazy rash. Hahah nothing some
    Ribs can't fix

    Great cook.

    I know about allergys, my son has food allergys.

    Glad you only got a rash.

  15. Most of the time I will smoke several things at the same time    Just hate seeing an empty smoker !!!

    You notice he didn't mention where that rash appeared...... That itch scratchie feeling may be the antibiotics making those bugs run around on your body. Ewwww.......

    Hahaha on my arms and legs. Ribs and Benedryl cleared it right up!
