Was working in the yard sunday so I decided to let dinner cook while I was at it.  This was as I was taking them off to serve.  2 hours on the chicken and 5 hrs. on the ribs @225.

 
Thanks, I would have never thought of that, but it makes sense.
 
 
looks good, cant beat anything wrapped in bacon and smoked. lol. and yeh like DS said, you wanna move poultry below other meats, nobody wants chicken dripping on stuff. ive done it a few times also not thinking about it. im still alive, but its better to be cautious. thanks for sharing.
 
Had the smoker running 26hrs. straight over the weekend.  Cooked pulled pork, ribs, deer sausage, bear roast and wild turkey breast.  Everything turned good except the ribs were a little drier than I would have liked.  Used 2-2-1 method, but these didn't turn out as juicy as the last batch.
