Figured I'd give dinos a try since I've read so much goods stuff here.
Seasoned them up with some off the shelf brisket rub and steak rub.


Smoked them you for about 6 hours at 225 to 250.



Nice color and flavor...



And a nice fattie too...

Simple one...onions, bell peppers and grated cheese mix. I was dyin' to do the bacon weave and just love the presentation.

Next one I'll go for the diamond weave like Cowgirl did. That thing was a work of food art!

All that food looks really good and the smoke ring was so pronouced. What kind of wood did you use to get that ring? We love the dino bone around this household.

Thanks for the complements folks! I used a combo of charcoal briquettes and hickory logs that I split down to manageable size. The entire cook was bone side sauce down. I sprayed them a couple of times with some Cajun Blast basting sauce and that was it.

Finished with a nice tomato based sauce with burbon and black pepper.
