Home is Glendale, AZ.
I have had a rack of spare ribs in for 3 hours  at 225 and no bone showing and internal temp is 155. Normally I would foil now for 2 hours but not sure what to do. Should I wait or foil even though the bone has not started showing yet.

Was planning the 3-2-1 method but might be 4-1-1 the way it's going.

Thoughts?

Yeah if you were planning on foiling anyway, you can go ahead and do it anytime you're ready.  I've had that happen lots of times:  no bones showing when I foiled, but when they came out of the foil later, very nice pull back on the bones.  Nothing to worry too much about...

Thanks Red, had to make a decision "wrap 'em" or leave go for full time with no foil. I went ahead and wrapped 'em, added a little maple syrup and butter. We'll see what happens. Have never tried the maple syrup but have done brown sugar and butter when wrapping. Time will tell.

I usually wait until 165° to foil, but I agree with Red----You'll get your pull-back.
