It has been a while since I have updated this thread. Work has been kicking my ass of late but progress is being made. Next weekend we have what might be the biggest festival we have done to date. We are expecting to serve roughly 1,000 people of the 9,000 they got last year. With an event this size we anticipate a little more scrutiny from the local health department. In order to make sure we comply with the county laws we are hard at work getting the sinks and pressurized water system installed.

Our grandiose plans:

The three compartment sink we picked up this past spring upside down.

A 12v RV pump we picked up on sale.

For a greywater tank we are using a 25 gal marine tank. It will be mounted under the smoker and attached to one of the crossmembers.

A 20 gal marine tank will be our potable water supply. It will be mounted under the rails it is resting on in the pic.

We picked up a portable LP tankless water heater for our hot water supply.

Our handwashing sink mounted.

We got lucky and found most of our fittings and lines at a local salvage yard for $80.

We plan to mock everything up tomorrow.

Phase 52 Joe.

Joel, morning...  Looks like a plan is about to come together....

It sure is Dave. We also found some Bayou propane burners and needle valves at the salvage yard for about 1/8 of the retail price. But that is a post for another day.

We ran out of fittings so we didn't get everything completely assembled. I plan to head back over to OBX's place after work and give him a hand. Here is what we did get done though.

We picked up a battery box that sits on top of the potable water tank frame. We also installed a toggle switch to turn the pump on and off.

The potable water tank is 20 gallons and runs under the trailer frame on the backside of the smoker.

The pump itself is mounted a few inches away under the frame for the 3 compartment sink.

A little bit better view looking towards the front of the trailer.

The battery from OBX's Jeep in the battery box.

And voila! We have water!

I was surprised how quickly the pump primed and water began to flow. It could not have been more than a few seconds. Hopefully tonight we will get the rest of the plumbing done and have the tankless hot water heater installed.

Joel, evening.....  Those tankless water heaters usually have a temp rise /GPM flow type rating.....  Installing a small brass ball valve in the cold water supply line to the tankless heater, you could adjust it to consistently give a certain hot water temp output....  Dave

We have yet to cut it on Dave, but I will keep that in the back of my mind. The water heater also has temp and flow rate controls on it. We were hoping to test it out but we have one fitting on one faucet that has been resoldered nearly a half dozen times and still leaks. :(

Turns out that if you forget to use flux leaks will happen. *shrug*

Interestingly enough, we can vary the temp of the hotwater by slowing the flow of the faucet. The slower you go, the hotter the water. However, with this hot water heater it will cut itself off below a certain flow rate. I hope the HD inspector will be impressed by it tomorrow morning.

If the HD inspector says you have to have a minimum hot water temp for sanitation, consider the valve....

....  Set for a max flow to achieve your temp, and you are good to go.....   Good luck with the inspection...

Thanks Brian and Dave! I hope to have some crappy cell feauxtography tomorrow evening.

We got our sinks done and a built in canopy done last week for the festival we did this past weekend.

In this pic you can see the canopy in place. We are planning to make some changes to it by splitting it down the middle so it won't retain heat. We used black pipe for the permanently mounted fittings (OBX turned them down with his lathe) and conduit for the actual frame. The sinks were mounted on the back of the smoker

Here is the sink setup. The white box under the trailer is the 20 gal potable water tank.

The 25 gal greywater tank is mounted in between the axles. We also used some PVC to create a filler neck for the potable water tank.

We got lucky and scored this 3 compartment bar sink for free.

We tucked the propane tankless water heater between the 3 compartment sink and the hand washing sink.

And voila! Running water.

The only thing the health inspector said to us is that she would have liked to have seen the sinks in front where the public could see them. That didn't stop her from issuing a permit though.

And a short while later it was on like Donkey Kong!

Very cool Joel......  Nice job.....   Probably the easiest permit you'll ever get....     :thumb1:  .... Dave

I was prepared for a much tougher go of it, but she was really nice and very helpful. That is very contrary to what I have heard others say about the local health dept.

Congrats on the Permit!  Looks great.  I love this build.  Now that you have a roof, and running water, all you need is a place to sleep and I can move in.!

Speaking of the health inspector, I guess she is no engineer.  She wants the sinks in "front" so the public could see them.  That would put them either on the tongue of the trailer (impractical/inaccesible) or right in front of the opening of the smoker, also impractical, difficult to access the smoker and likely to lead to contamination from any drippings falling from the racks onto the sink.  I think your plan was spot on.  People want to see the pit, not the sink.
