I am whooped but we did well today. Pulled pork sold out first, brisket sold out second, and then ribs sold out. Out of 130 lbs of coleslaw we had one steamer pan left over. For the 140 lbs of baked beans we had a steamer and a half steamer left over. Chicken and kielbasa did not do all that great. Pork shots did well but we had a few left over. I only snapped 3 pics with my cell phone so here they are.

I have no idea who this guy is but he wanted to show us how much his 18 month old like our ribs.

I also got a chance to meet our own "alelover" today and give Scott a tour of the smoker. It was great to meet him! I will try and do a bit better job of collecting my thoughts and post them tomorrow. Ultimately we have nothing to be ashamed of and did much much better than break even on food costs. :o)

That kid will never go back to his pacifier!

Thanks Bear! The little fella just would not stop gnawing on that rib even though all these strangers were gathered around taking pics of him. lol

Thanks Dave. We learned a lot from this and will have an even better handle on it for the next time.

Joel congrats I know you put a lot of work into this event and I'm really happy for you that it turned out so well.

Just a quick update. We suffered some minor equipment failures at our last festival. We had a weld on one of the hinges for the warming box break. That will be an easy fix. We also realized we never finished welding in the tracks for the air intake dampers and lost one on the way to the festival on Friday. Luckily we found the damper and can finish up the welding next weekend. We also have to correct a little design flaw with our grease drain that isn't really a problem unless the smoker isn't level and lower on the tongue end of the trailer.

Overall we are still very happy with our design. 80 shoulders have been smoked, 15 briskets, 160 chicken quarters, 2 turkeys, 3 meatloaves, hundreds of pork shots, 300 lbs of baked beans, 100 pounds of kielbasa, 3 venison shoulders and one wild boar shoulder.

That is one beautiful monster smoker you put together.

Thanks Dragon!

just seen this for the frist time and it helped answer a question on a new build I'm starting after the frist of the year. You did a outstanding job on this build.

Thanks randya! Plenty of good builds out there. I was hoping that by posting what we did, why we did it, and the things we ran into would help someone else down the road.

Awesome looking smoker!  I've been looking for different ideas on how to tweek my rf design and you have been a big help.  I've read every post on this thread and it's the reason I joined SMF.  Thanks for all the good ideas.

On to phase 2. My buddy Gary found these at the Habitat Restore. Not bad for $40.

For now we are planning on using a 12V RV water pump and a RV LPG tankless waterheater. The sink attached to the fire/warming box will be for handwashing. Either a 20 or 30 gal HDPE barrel will be used for potable water. We have yet to figure out what we will use for the greywater tank. Also, we are making plans for a couple burners and a grill. Fabrication will begin again in two weeks.
